How to make creamed corn

Take it off the heat and serve it while it’s hot.

Creamed corn can be frozen for longer storage. Allow it to cool completely, then transfer it to a freezer-safe container. Frozen creamed corn can last for 2-3 months. When you’re ready to use frozen creamed corn, transfer it to the refrigerator to thaw overnight. Reheat it on the stove over low to medium heat, stirring occasionally. Ingredients  

  • 1 tbsp (15g) butter
  • 1 tbsp (10g) flour
  • 1/3 cup (80ml) milk
  • 1/3 cup (80g) cream
  • 2 ½ cups (375g) corn kernels , canned or frozen
  • 1/2 tsp (3g) salt
  • 1 tsp (5g) sugar
  • 1/4 tsp black pepper
  • Pinch of nutmeg

Instructions 

  • In a medium saucepan melt butter over medium heat. Add flour and cook for 1 minute.

  • Gradually whisk in milk and whipping cream.

  • Add corn, salt, black pepper, sugar and nutmeg. Stir to combine.

  • Cook for about 5 minutes, stirring constantly until thickened.

  • Remove from heat and serve hot.
